Can someone explain to me, with practical examples, what's the real difference between Query Collection and Document Reference?

I mean, this question always gets me stuck. I watched in a YouTube video a guy querying a collection in a Listview widget to retrieve a list of products. Then, in a Row widget, he retrieves data from a Document Reference to bring a single category name of the products.
